Favorite Recipes
Who doesn't love food, right? Thought it might be fun to share our favorite recipes. Traditional Amuuuurican, ethnic, sweet, hot, whatever floats your tortilla! Even share your favorite recipe for a *ahem* alcoholic beverage!
I'll start with an old favorite. Meatloaf. I was tired of my same ol', same ol' recipe that I had used for 20 years and decided to give it a little twist. I don't measure anything anymore, so please adjust measurements as needed.
My Meatloaf
1 lb. ground chuck
1 lb. ground sausage (whatever kind you like - I used mild Italian)
1/2 cup Italian breadcrumbs
1 egg (beaten)
1/2 cup HOT salsa or to taste (this is the twist)
1 medium onion diced
1 or 2 cloves garlic
1 tsp. cumin (we love cumin so I used 1 tbsp.)
1 tsp. oregano
1 tbsp. salt
pepper to taste
Mix it up (I have no idea how to do this without using my hands). The consistency should not be too runny or too stiff. Add salsa if too stiff. Add breadcrumbs if too runny. Throw it in the oven at 350 degrees for 45-50 minutes (check to make sure there is no pink in the middle). Periodically drain grease as it cooks. Serves about 4-6. Make sure you have enough left over for sandwiches the next day - YUM! Oh, and use your favorite mayo on the sandwiches - we like the new olive oil mayo from Kraft.
