The national ID cards in Egypt list the card bearer's religion. A Christian convert from Islam has gone to court to try and get his ID card to reflect his conversion. A judge has now denied this.
""If you get caught going to a church while your religion on your ID is Muslim, that could get you arrested, questioned and tortured," the commentary said. "The latest victim was a 27-year-old woman, Mrs. Sherreen, mother of two children from Alexandria, Egypt. She died at the police station on Jan. 3, 2008, after five hours of torture for refusing to renounce her Christian faith and come back to Islam." "
This is so called moderate Egypt.

Not sure how this is going to mesh with the previous article. So it appears now you can be registered as a "hyphen" or no religion or Christian or Jew, but once you check into Islam in Egypt ( or be born into it) you can never leave. There are also some links in the first article at the top of this page above that indicate children in Egypt are considered Muslim if their father converts. There were some Christian boys whose Father at some point was a Muslim, so the government was giving the boys a hard time to the point they were being forced from school for not embracing their father's religion.
Welcome to moderate Islamic Egypt- you can check out of Islam anytime you like but you can never leave.
